Quinoa Chicken Salad


  • Cooked Quinoa, enough for one serving for each child
  • 1/2 Pound cooked chicken - cubed or cut into strips
  • 1 Cup canned corn
  • 1 Cup canned peas
  • 2 carrots, shredded
  • sliced green onions (optional)
  • 1/2 red pepper, diced
  • few sprigs fresh parsley


Cook quinoa - enough for at least one serving per child (note - for added flavor cook the quinoa in chicken broth).  Italian dressing to taste - just enough to mix the ingredients together. Combine all ingredients. Serve hot or refrigerate for at least 2 hours and serve cold. 4 Servings
