Pumpkin Bread

Homemade pumpkin bread

Ingredients
1 1/2 cups sugar
2 cups pumpkin
1/2 cup oil
2 1/2 cups flour
2 tsps soda
1 1/2 tsp cinnamon
1 1/2 tsp cloves
1 egg
1 cup nuts (optional)
1 cup raisins
1/2 cup chopped dates (optional)

Instructions
Mix raisins, nuts, and dates with dry ingredients.  Mix all ingredients together.  Divide into 3 small loaf pans.  Bake at 350 for 45-50 minutes, til a toothpick inserted in the center comes out clean. 

This recipe adapts well to mini-loaf pans - adjust cooking time as necessary.  Bread freezes well.

"Pizza" Crackers

Recipe Name: "Pizza"Crackers

Ingredients: 
Club crackers
shredded mozzarella cheese
garlic powder, optional

Instructions : spray cookie sheet with non stick spray. Line with club crackers, need about 3-8 per child. Sprinkle with cheese. sprinkle with garlic powder. Bake at 350*f for 8-10 minutes or until the cheese is melted. Serve right right way. 

Special Notes or Tips : 
All the kids say it taste better than regular pizza!!

Low Fat Cheese Ball With Crackers

Recipe Name: 
Low Fat Cheese Ball With Crackers

Ingredients: 
8 oz. Softened Cream Cheese (Fat Free)
1/2 Pkg. Dry Ranch Dressing Mix
6 oz. Shredded Cheddar Cheese (Fat Free)
1/4 Cup Mayo Free Mayonnaise
1/4 Cup Milk (Skim-Fat/Free)

Instructions: Mix Cream Cheese, Ranch Dressing Mix, Cheddar Cheese, Mayonnaise and Milk. Form A Ball - & Chill for Two Hours or Place In The Freeze for 1/2 Hour Before Serving Time. Serve With A Variety Of Different Crackers.

Special Notes or Tips: I prefer to use a sheet of plastic wrap to form the cheese ball into a perfect roll.
