Recipe Name: Caramel Apple French Toast Bake

Ingredients:
1 pkg. (8-10 biscuits each) enriched flour or grain refrigerator biscuits
1/4 cup cinnamon sugar
1/4 cup brown sugar
1/4 margarine
1/4 cup white sugar
1/4 cup vanilla ice cream

Instructions:
Preheat oven to 400 degrees F. Open refrigerator biscuits and cut each biscuit into four pieces. Roll biscuit pieces in cinnamon sugar until well coated, then drop into an ungreased loaf pan. In a glass bowl, combine brown sugar, margarine, white sugar, and vanilla ice cream. Heat in the microwave for 2 minutes on high power. Pour mixture over biscuits. Bake for 20 minutes. When finished baking, turn pan upside on a tray and serve.

Serves: 16-20 biscuits.

Meal Component: 1 serving (1 biscuit) = 1 bread alternate at snack or breakfast.

Recipe Name: Egg Souffle

Ingredients:
6 slices buttered bread, cubed
2 cups cheese, shredded
5 eggs, beaten
1/2 tsp. dry mustard
2-1/2 cups milk dash of salt and pepper

Instructions:
Alternate bread and cheese in a greased 1-1/2 quart casserole. Mix eggs, mustard, milk, salt, and pepper, and pour over bread mixture. Refrigerate overnight. (Let set at room temperature about 1 hour before baking if possible.) Bake at 350 degrees F for 1-1/2 hours. Set casserole in pan of water when baking.

Ingredients:
1/2 cup plain yogurt
1 tsp. apple spices (cinnamon, nutmeg)
1/2 cup nutlike cereal nuggets
4 cups fresh, sliced peaches

Instructions:
Mix yogurt and spices. Spoon peaches into 6 individual bowls. Drizzle each serving with yogurt mixture and sprinkle cereal over each.

Serves: 6 half-cup servings at breakfast/snack.

Apple Spice Muffins

Recipe Name: Apple Spice Muffins

Ingredients:
1/2 cup sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
 cups all-purpose flour, sifted
1 cup apples, peeled, chopped 1 egg, medium
1 cup milk, room temperature
1/2 cup butter, melted

Instructions:
Mix all ingredients together and pour into muffin tins lined with paper. Sprinkle cinnamon sugar on top. Bake at 450 degrees F for 20-25 minutes.

Serves: 12 muffins.

Meal Component: 1 serving (1/2 muffin) = 1 bread alternate at breakfast.

Nutrition Information: 197 calories, 4 g protein, 27 g carbohydrate, 1 g dietary fiber, 8 g total fat, 38 percent calories from fat, 5 g saturated fat, 249 mg sodium

Recipe Name: Breakfast Waffle Sandwich

Ingredients:
2 frozen waffles (enriched flour as first ingredient)
2 T. low-fat cream cheese
1/4 cup fruit slices

Instructions:
Toast waffles. Spread one waffle with cream cheese and place slices of fruit on top. Place second waffle on top. Cut in half.

Serves: 2

Recipe Name: Egg Hashbrown Bake

Ingredients:
6 oz. dry hashbrown flakes (boxed)
1-1/2 cup water
1-1/2 cup shredded cheddar cheese
1 cup milk
8 oz. chopped ham
1/2 cup onion (optional)
1 tsp. salt
1 tsp. dry mustard
9 eggs, beaten

Instructions:
Mix all ingredients and put into 9 x 9-inch ungreased pan. Bake at 350 degrees F for 45 minutes to 1 hour. Can be made ahead of time and refrigerated until ready to bake.

Serves: 14

Meal Component: 1 serving = 1 serving meat and 1 serving fruit/vegetable for a 3- to 5-year-old.
